Aim of this project is the monitoring activity of physical stresses affecting wines during international shipments (1). Monitoring activity is followed by the simulation of monitored profiles in the closed-loop simulation systems developed by the Food Supply Chain Center (2): Finally, the protocol of the Food Supply Chain Center organizes a sensorial analysis conducted by a panel of experts (3).
